Cauliflower Chicken Casserole
Okay, this is one of my favorite dishes and it is Keto friendly for those following the Keto Diet, Carb Cycling, or just wanting to watch your carbs in general.


 We start off by frying up some bacon. I mean, hell, who doesn't love bacon. I tend to use the whole package for bacon because I don't like to let it sit in the fridge and wait to be used.


















Next, I cut up a package of chicken into small pieces. You can also use a can of chicken to save time, but I prefer to use the real thing. I also like to leave the chicken a little larger than what comes in the can.

After cutting up the chicken, you want to brown each piece in a frying pan.



















Next, I take about 3 or 4 scallions and chop them up into small pieces.






















While you are frying up the chicken and bacon, you should begin preparing your cauliflower. I prefer to use a fresh head of cauliflower rather than using frozen, but you can substitute frozen instead.

Cut up the cauliflower (unless frozen) and place it in your pot to steam it.

This should take about 25 minutes.















Once you have the above steps completed, it is time to put your casserole together with a few more ingredients. In a large bowl, please combine the following:


  • Steamed cauliflower (be smart and let it cool down first)
  • The browned chicken, 
  • 1/2 cup of Sour Cream
  • Taco seasoning mix (Although I have made this with Onion Soup Mix and with Ranch Seasoning. Any of the three will work well with this dish).
  • 1 Cup of shredded Cheddar (You can use whatever cheese you'd like, but we tend to use a lot of cheddar in our house).
  • Add half of your bacon and crumble it up
  • Add half of your scallions.
Mix everything together very well and place in a casserole dish.

Then, you will take the remaining crumbled pieces of bacon and scallions to add to the top and add another cup of cheese (your choice, we went with cheddar again).



Bake in the oven at 375 degrees for about 25 minutes.


And there you go, a delicious and Keto friendly meal you will enjoy. This is usually split three ways in our family and usually holds about 3 servings for each of us so I would say 8-9 servings depending on your portion sizes.
